Tater Candy

Old fashioned Tater Candy is a requirement at my house right before Christmas. Many of you out there probably know how to make it but I am including a few instructions just in case.



First, boil a small potato whole with the peeling still on. Run cold water over it and peeling will come off easily but watch out and don't burn your fingers.

Next, get a mixing bowl and put about a pound of confectioners sugar in it. It also doesn't seem to matter if it is 2X or 10X. Get the cheapest.

The trick now is to form a slightly stiff dough by mixing the potato into the sugar. Do not add all at one time! I did this when I first started making it and could never get enough sugar in it to firm it up. So add a small amount of the potato and squish it up really well. The water from the potato will begin to mix with the sugar. Use your hands if you need to. I do. It's a mess but it's keeps me from adding too much potato and having to start over. Simply keep adding a little of the potato until the dough is firm enough to handle.

Now, place a piece of wax paper on a flat surface and dust it with some of the sugar, then scrap the dough onto it. With your hands or rolling pin, roll out about 1/3" thick.


Get the peanut butter and spread it on the dough. Do not come all the way out to the edges. Put it on fairly thick.

Now roll it up beginning at one end.

 Wrap wax paper around the completed candy and place in refrigerator to harden. I generally keep mine in the refrigerator until it's gone.
